Today is Eric Greenspan's day to helm the dineLA truck. The Foundry chef-owner started serving French toast and maple-dulce de leche syrup at dawn this morning outside his Melrose Avenue restaurant, where he'll be until 9 a.m. Later this morning he'll do another shift, as part of dineLA's week of getting some of the town's top chefs onboard the dineLA food truck to promote the upcoming Restaurant Week. Between the truck, taping the new season of The Next Iron Chef (which begins Oct. 4), working on a new cookbook project, and expanding The Foundry's hours, Greenspan's been a little busy. Like I'll-sleep-when-I'm-dead busy.
Three weeks ago Greenspan inaugurated Latin Mondays at The Foundry. “We're like two restaurants; a fine dining destination spot and a neighborhood hang-out; the hang-out part of the restaurant demanded that we be open on Mondays,” says Greenspan. “I call it Mexican trucker food. Not that I'm a Mexican trucker.”
On Mondays, in addition to the regular menu, Greenspan serves gorditas: tamarind garlic steak gorditas; orange-glazed chicken gorditas with pinto beans and mole; and a Dr. Pepper-marinated pork gordita with horchata sauce and pickled cabbage. Mini churros with Abuelita chocolate dipping sauce. A cilantro mojito with tamarind.
Monday nights Greenspan also gives 25% off to restaurant industry folk. “Bring your pay stub until we get to know you,” says Greenspan. “Tell your worst Tim Goodell story and get a free cocktail.”
