It’s spring, and there’s no better place to celebrate Easter than in a garden setting. The Sunset Marquis Hotel & Villas will host an Easter Sunday brunch on  April 5. Located in the heart of the hotel’s lush gardens, Cavatina will feature a Mediterranean buffet created by Executive Chef Luis Morales.

The menu features a raw bar, carving station, live station, a spring market table, and a Sweet Table.  Priced at $145 per person and $75 per child (ages 5 to 11), the brunch includes an optional $40 bottomless easter bubbles, mimosas, or Easter Spritzers, $55 classic wine pairings, and a $75 sommelier selection.

Some of the choices for the table include warm flat breads, mini Viennoiserie babka rolls with whipped cultured butter, and whipped labneh with citrus, herbs, and house berry jam.

Highlights at the raw and chilled bar include Shigoku oysters with grapefruit-fennel mignonette, jumbo prawns, a smoked salmon platter, Levantine spring crudo, ahi tuna, edamame hummus, crispy rice, preserved lemon, and pickled radish.

The spring market table is a melange of salads, including snap peas and radishes with pistachios and goat cheese, burrata and strawberries, shaved asparagus with pecorino and lemon, and Moroccan baby carrot salad with ginger, tamarind, and whipped yogurt.

Carving and hot mains include slow-roasted lamb shoulder, herbed salmon with date syrup, and the live station will serve up organic omelets, ricotta-lemon pancakes with blueberries, green shakshuka, and spinach cavatelli with spring peas.
