After six years as executive chef at downtown's Water Grill, David LeFevre is leaving the restaurant to open his own place. He'll stay on for the next six to eight weeks during the transition. “They're looking right now,” said LeFevre this morning, when we called him at the restaurant, of the move to find his replacement.
LeFevre couldn't give us many details of the new project yet, only that he will be chef-partner of a restaurant that will open in the spring here in Los Angeles. “The opportunity came up with some great people I've known for years,” said LeFevre. “It's going to be a personal cuisine for me.” Definitely some seafood, said the chef, but nothing to compete with Water Grill, an organization he repeatedly praised. “The way they've treated me has been just regal.” A fitting thing to say about Water Grill's owners, King's Seafood. “Ha, I didn't even think to do that on purpose,” said the chef. The new project will be the first the former Charlie Trotter executive sous chef will partner in. As for location or name, just be patient. “All the names I think are wonderful, people look at me kind of weird.”
