Colombian-born Chef Carlos Jurado of Selva ventures beyond his Colombian roots to experiment with a new menu to be featured in a once-a-month evening dining series. Selva, owned by Long Beach locals and restaurateurs Geoff and Karna Rau, is located in the emerging Zaferia District of Long Beach.

The six-course menu includes dishes like scallop crudo with yuzu kosho, fermented aji amarillo, coconut vinaigrette and squid ink tuile, croquettes of duck confit with rocoto chili jam and bresaola, and pumpkin nuegados with chancaca, a warm sweet sauce made from sugarcane and crema. 

Bar Director Mike Borowski will design cocktail pairings for each dish like the La Rosa featuring rose, apple, pomegranate, lemon and amaro or The Blueberry Thing with muddled blueberries, gin, lemon, pineapple, violet liqueur, and luxardo. 

The event takes place on Tuesday, Jan. 9, (limited to 24 seats only). Tickets, schedule and reservations go live this week and are available at www.selvalbc.com. Reservations are highly recommended; $95 for the six-course menu and an additional $50 for cocktail pairing.

Chef Ricardo Zarate and Chef Mario Alberto reunite at Olivia Pizza & Plants Wine Bar vegetarian restaurant in Koreatown, co-owned by Grammy winner Anderson Paak on Tuesday, Dec. 12. It will be their first collaboration since 2009 at Mo-Chica in DTLA. The $100 per person multi-course menu includes an Akami tuna hand roll, grilled king mushroom with BBQ potatoes, in tigers’ milk sauce, green pea risotto with Peruvian artichokes and oyster mushrooms in Peruvian potato stew with mint chimichurri.  The optional wine pairing is $65 per person.

Olivia is taking pre-orders now for Alberto’s Christmas tamales that can be picked up on Friday, Dec. 22, and Saturday, Dec. 23.  Flavors include mushroom and eggplant with chile Morita, turmeric and thyme masa as well as jackfruit and chickpea with pasilla peppers, tomatillo and rosemary charcoal masa. One half dozen is $36, and one dozen is $72.

Another unique collaboration worth checking out is chefs Gilberto Cetina and Ki Kim at Holbox on Tuesday, Dec. 12 which will feature a fresh take on Korean-Mexican fare.  The dinner comes on the heels of the closure of Kim’s  Michelin-recommended Koreatown restaurant, Kinn, in November, citing the emotional and physical toll it took on him and his team. The chefs’  dinner collaboration will feature the seafood sensibilities of both chefs. The space is limited, tickets are on sale at $190 per guest and can be purchased on Tock at this link.
