In an ever-changing world, Breadbar is still into chef's series that give traveling talents a temporary place to hang their toques. The Third Street location is already home to LudoBites, and the “Hatchi” guest chef program gets under way this week in Century City.

Consulting Chef Noriyuki Sugie, who's been a presence at Breadbar with his Crudobar and Bentobar concepts, and collaborated with David Myers at Sona last week, is overseeing each performance. On the last Thursday of each month, a different visiting chef prepares eight small plates that cost $8 a piece. Chef Nori explains to us that he “asked each chef to create their own concept,” and points to a similar series in San Francisco as initial inspiration that's he's now choosing “to approach a different way. [Hatchi will be] same cutting edge, but more low key and with rising chefs. It's creative and fun.” He adds, “hatchi means eight and is a very good number” that also symbolizes infinity.

First up on Thursday night is Debbie Lee from “The Next Food Network Star,” whose dishes — including crab and corn fritters with kimchee aïoli and pickled watermelon rind, and braised Korean beef short ribs with country rice and twice-fried pork belly — draw from Korean and Southern influences as part of her “Seoul to Soul” theme.
