Jeremy Fox's newest project, an unexpected but welcomed pop-up at Square One Dining entitled Old Soul, kicks off its four-day-a-week run tomorrow night. Helena Brown and Helen Springut, who facilitated Old Soul as part of their “culinary incubator” program this is not a pop-up, hope to run the dinner service through the beginning of 2013, with a brief interruption during the holiday season.
It turns out the concept behind Old Soul was pretty much what Fox had on his mind when we chatted with him early this year, and the weekly rotating tasting menu ($50) will include some of the culinary ideas he's been kicking around in his head since his Ubuntu days. Also of note: vegetarian options will be available to substitute for meat-free diners.
After the jump is a sneak peek at the menu for the first week's run, which goes from December 6th through December 9th. You might notice some similarity in the third course to the dish Fox served at last weekend's James Beard dinner, featuring a homemade blood sausage called morcilla. (Fox also sent us some gory production photos of the blood sausage, shown at the bottom of the page.)
