Chef T. Nicolas Peter has taken up residency by the pool at the Beverly Wilshire Hotel through July with his Nouvelles Saveurs pop-up as a sneak peek of what to expect in the fall when he opens his new restaurant on Canon Drive in Beverly Hills.
The seasonal Provence-influenced five-course menu includes starters like a choice of espelette seared scallop with Santa Barbara uni, saffron emulsion and Ossetra caviar or fresh goat cheese tart with raspberries and candied ginger. Entrées include grilled Loup de Mer with Dungeness crab, fava beans and tomato-Pernod beurre blanc or a Wagyu shank served with baby artichoke, preserved lemon and potato mousseline. Dessert options include a strawberry pistachio mille-feuille with Harry’s Berries strawberries and rose syrup or molten chocolate torte with Grand Marnier valrhona and Chantilly cream.
Signature cocktails like the Good Hope Punch with Pyrat reserve rum Grand Marnier and pina redux as well as non-alcoholic elixirs are also on tap, including a Quiet Time For Alice which combines chamomile tea with lingonberry syrup, elderberry ice and candied apricot.
The al-fresco setting is drenched in hints of lavender and the south of France, in a newly constructed space with floral installations and dining pavilions that are meant to conjure up a coastal Mediterranean vibe. The residency is open for dinner Wednesday-Sunday from 5:00-10:00 p.m. through Monday, July 11.
