We are blessed to have a few options in town for fantastic cochinita pibil. Longtime favorite Chichén Itzá is hard to argue with, and newcomer Rocio's Mexican Kitchen does a pretty sweet version as well. But the one we've been craving most recently is the giant plate of juicy shredded pork at El Faisan y El Venado. The colorful, homey Highland Park restaurant specializing in Yucatán cuisine has many dishes that satisfy, but the slow-simmered pork is the one that haunts us if we stay away too long. The meat is a little chunkier than it is in some other versions, and the portion is gigantic. Served with black beans and fluffy white rice, and topped with vibrant fuchsia pickled onions, it is the most soulfully comforting meal around.
