Backroom experiments can have big results. Take Frankenstein’s monster, for instance (or Sir Gregor “The Mountain” Clegane from Game of Thrones). Recently, and in reality, we can look to pastry chef Lindsay Kirk, the mad scientist who created the potentially legendary “Piescream sandwich” at Playa Provisions in Playa del Rey.
Kirk, a longtime home baker and restaurant server, joined the Playa Provisions pastry team in January 2015 and has been heading the department since January 2016.
Each month, Playa Provisions owners Brooke Williamson and Nick Roberts host a Flights & Bites night in their Grain Whiskey Bar, which resides hidden in back of their multifaceted restaurant compound. For April’s tasting, which showcased Macallan Scotch, they tasked Kirk with dessert. To pair with Macallan Rare Cask, she created a piescream sandwich, featuring a pair of circular triple berry hand-pies with housemade old-fashioned (as in the cocktail) ice cream in the middle. Needless to say, the dessert was a hit.
On May 4, Playa Provisions rolled out the PieScream Sandwich ($8), which is available after 5 p.m. in the Dockside restaurant or by request in the building’s other outlets: Grain, King Beach Café and Small Batch ice cream parlor. The current incarnation features buttery pie crust cut into three-inch rounds and filled with bourbon-soaked blackberries. Two soft, flaky discs cradle vanilla bean ice cream, though you can sub in other frozen flavors for an extra 50 cents. Kirk plates this dessert with more boozy berries; a sweet-tart foil to the rich dessert.
Kirk added, “If they do well, we'll be making them an all day, every day type thing!” People of L.A., the fate of the Playa Provisions piescream sandwich is in your hands.
