While his Vetri Cucina is still temporarily closed at the Palms Casino, James Beard Award-winning chef Marc Vetri is bringing his team back together and popping up at the Red Rock Resort in Las Vegas with the option of a permanent space. The new Osteria Fiorella will be located in the Terra Rossa space next to Blue Ribbon Sushi Bar and Grill.

The casual menu will feature antipasti and salads, pizzas made in a wood burning oven, daily hand-made pastas, meat and fish cooked  in a Josper charcoal oven, dessert, wine and cocktails. The open-kitchen concept features a different culinary vision of Italian cuisine that will focus on a variety of classics like rigatoni with Fiorella sausage ragu and locatelli cheese, ricotta gnocchi with brown butter and crispy leeks, spaghetti with Bianco di Napoli tomatoes, Sal’s meatballs with bruschetta and ricotta — an homage to Marc’s father Sal. Other menu highlights include the veal chop Milanese and fried squid with agrodolce.

Vetri will present Vegas diners with an expanded version of his popular Philly pasta bar Fiorella, named after the famed family sausage storefront Vetri recently acquired. upbringing in South Philadelphia.  The open-ended restaurant takeover will begin July 10 and will be open Wednesdays through Sundays for dinner service initially with the opportunity for an expanded schedule and meal periods.
