As the culinary experiment of Test Kitchen winds down, the chef musical chairs act continues. Tonight and tomorrow night, November 30th and December 1st, Walter Manzke (Church & State, Bastide, ____ ) will be cooking Spanish tapas with Perfecto Rocher (the Blvd, Manresa). Manzke describes the menu as “all pretty traditional; a lot of family style.” Okay, but what traditional means in the hands of these two chefs is anyone's guess.

Of course a phone call to Manzke requires a question about his current restaurant project. “I'm still working on it,” said Manzke. A time line? “I hope soon. I'm getting tired of this.” We'll let you know.

After Manzke and Rocher, Test Kitchen has quite the line-up in the coming weeks. Rémi Lauvand, Ian Gresik of Drago Centro, Dominique Crenn, Seth Greenburg, etc. On December 7th, Ray Garcia, Sal Marino, Ilan Hall, Alex Becker and Sherry Yard cook for Cart for a Cause. And on December 10th, Alain Giraud will cook a dinner devoted to black truffles. Time to pitch a tent on that stretch of Pico Boulevard, I guess.
