Will Makris built his brand on grinding through adversity. Whether it was when he drove a Tropicana truck to make a living or since he has become a prominent NYC restaurant entrepreneur, Will Makris knows the meaning and value of hard work. After taking a few risks, betting on his ability to learn on the job and win people over, Makris has a strong track record in the hospitality industry and has solidified himself as one of NYC’s most unique restaurateurs

With an ability to make a sincere and strong connection with anyone in all aspects of the restaurant business — from the investors to the chef to the busboys to the customers — Makris rose to the top of some of the most successful hospitality groups such as Provocateur, Butter, as well as Tao Group. While this gave Makris much-needed experience, he always aspired for greater heights. Makris is now an established restaurant entrepreneur with no plans of slowing down. Makris is already the co-owner of Lola Taverna & Little Prince with partner Cobi Levy, Broken Coconut with partner Scott Sartiano, and lounges such as Socialista with partner Maggio Cipriani.

Despite many other restaurant entrepreneurs slowing down since the onset of the pandemic, Makris is actually taking more risks. Makris plans to open a membership-based 20,000 square foot high-end private club named Zero Bond with his Broken Coconut partner Scott Sartiano. Makris plans to market this to his elite clients within his network.

Beyond new endeavors, Makris also plans to double down on the success he has already found with his Lola Taverna and little Prince ventures. Makris and Levy, his partner in both aforementioned restaurants, are genuinely expanding these bonafide NYC stalwarts to even larger and more luxurious spaces.

Makris is confident in his ability to expand these brands precisely because he has risen above adversity his entire life as well as his entire career. Makris’s tenacity and ability to network put him in the position he is in today, which is why he is staying honoring those roots. Getting creative with their outdoor dining options as well as utilizing their celebrity and socialite network to boost their social media presence, Makris and Levy have actually been able to grow Lola Taverna’s business throughout the pandemic.

Due to their unparalleled success during these times, the forward-thinking Makris has plans to expand the restaurant to other cities such as Las Vegas and Los Angeles.

Will Makris’s steady yet bullish attitude has been a much-needed presence in the hospitality industry throughout the last year. We will certainly be covering his next move.
