B-Sides at Bibo launches on Sunday from 5 p.m. to midnight. This week the team at the West Hollywood watering hole  Bibo Ergo Sum announces the launch of a new weekly program that invites its regulars to be a part of creating new menus. Known as B-Sides, the program will take the process of research and development from behind the scenes and place it front and center, where bartenders will be workshopping cocktails with guests in real time.bibo ergo sum b sides 964508

The team will also be tinkering with “duets,” elevating the traditional boilermaker to a higher experimental level with more unique pairings.

Since singles and duets at B-Sides are still a work in progress, they will be available at a discounted price of $6 and $12, respectively. Some cocktails will go on to be hits and land on future menus while others will live as cult favorites, only appearing at these Sunday B-Sides sessions. Each week the bartenders will play vinyl records of their choice, and regulars and friends of the bar are encouraged to bring in some of their favorite records to be played at the bar as well.
