Although it will serve the mini chain's pastries, cakes and cookies, the WeHo outpost will, according to owner Maury Rubin, also offer savory fare such as “pressed sandwiches, soups and maybe salads.” There'll even be a “sister” version of the hot chocolate for which Birdbath (and its joint operation, City Bakery) is famed.

When asked if the menu will in any way be tailored to LA's health-concerned denizens, Rubin responds: “It's full of some new and very unique items (example: banana-miso muffin with soy nuts)… But while Birdbath may be green, the pastry is based on the foundation of butter, sugar and eggs (albeit organic).” A man after our own heart.

As for the store's eco credentials, they'll be just as lofty as at the three NYC branches (Birdbath's tagline is “Neighborhood Green Bakery,” after all). Nearly 100 per cent of the materials will be sustainable, and sourced locally. The counter display will be built from shipping crates normally discarded from LA-area art galleries and design firms, and customers trying to save the planet, and simultaneously risking their life, by cycling or skateboarding to the bakery will be rewarded with a 15 per cent discount. (The offer also extends to those coming by hybrid car).

We'll have to wait a few more weeks before we get our hands on the goods, though: Rubin is hoping to open the spot, located at the corner of Santa Monica and Robertson Boulevards in the revamped Pavilions, in early 2010.

More Los Angeles Birdbaths are planned, although, wisely, Rubin, who earlier this year saw the closure of his City Bakery in Brentwood, is taking it things one step at a time.
