Waterloo and City, chef Brendan Collins' Culver City restaurant, will close at the end of 2014. Taking its place will be Hatchet Hall, a new project from Brian Dunsmoor and Jonathan Strader. Dunsmoor was one of the chefs at Hart and the Hunter, where Strader worked front-of-house. Both of them recently left after a short stint at Flores and the Ladies Gunboat Society. 

Waterloo and City opened in 2010 and quickly gained popularity for its mix of gastropub fare and more ambitious cooking, as well as a sprawling patio and convivial (if large) dining room. Jonathan Gold said of the place, when he wrote about its opening in July of that year, “Waterloo & City is to Culver City what Suzanne Goin's Tavern is to Brentwood: the right restaurant in the right neighborhood at the right time.”

A spokesperson for Waterloo and City said in an email to the Weekly: 

We will be closing in the beginning of 2015. We are pursuing other opportunities & on to other projects. It has been a wonderful 5 years for us. We wish to thank all of our customers and hope to see everyone in our new ventures.

 A statement from the new ownership:

In January 2015, Brian Dunsmoor and Jonathan Strader from The Hart and The Hunter and the original Wolf in Sheep's Clothing will be launching their brick and mortar project, Hatchet Hall. The new concept is scheduled to launch mid March.
