Walter Manzke, who left the downtown bistro Church & State at the end of February, is popping up at Breadbar's Hatchi series. Manzke will cook for one evening, on June 24th, which marks the 1 year anniversary of the one-chef-one-night event. “They've been asking me and asking me, and I finally said I'd do it,” said Manzke last night by phone. He has no idea what the menu will be yet, although he may have gotten some ideas at Pebble Beach recently, where he cooked the Food & Wine Founder's Dinner with Thomas Keller.

For everyone dreaming of pig ears (which, by the way, you can still find on the menu at Church & State) and the day when Manzke will open his own place, just be patient. Manzke and his wife Marge are “making good progress” on their own project. “It'll take a year, give or take a month or two.” In the meantime, you can follow the chef on Twitter (change your Twitter name, Walter!) and keep dreaming of pigs. You could do worse.
