June is National Avocado Month and according to the California Avocado Commission, there are more than 3,000 avocado growers in California farming on approximately 50,000 acres. A single California avocado tree can produce on average about 60 pounds or 150 fruit a year.  There are seven varieties of avocados grown commercially in California, but the buttery Hass that  we all know and love in our guacamole is the most popular, accounting for approximately 95 percent of the total crop volume.

The Hass variety is a California native that was first discovered by Rudolph Hass in the mid-1920s. Every Hass avocado in the world can trace its roots to the “Mother Hass Tree” in La Habra Heights, California.

California Avocados are heart-healthy fruit that are naturally sodium-, cholesterol- and trans-fat-free. One-third of a medium avocado (50 grams) has 80 calories and contributes nearly 20 vitamins and minerals, making it a nutrient-rich choice.  The avocados act as a nutrient booster by helping increase the absorption of fat-soluble nutrients like vitamins A, D, K and E.

Eric The Trainer’s Kimchi Avocado Toast

Kimchi Avocado Toast

  • 2 pieces of bread toasted
  • 1 avocado if large mashed (if small, 1.5 to 2)
  • 2 over easy (or any style you prefer) eggs (I cook mine in sesame oil)
  • 4 pieces of cooked chopped bacon
  • 1 tomato diced
  • 2  teaspoons of Kimchi
  • 2 sprigs chopped green onion
  • sprinkle of garlic salt
  • sprinkle of pepper
  • sprinkle of sesame seeds

Want it vegan?  Omit the eggs and bacon — it’s amazing this way too!

How to assemble

Take toast and spread with avocado mash. Sprinkle garlic salt and pepper over avocado, then spread chopped kimchi on top of avocado. Place the cooked egg on top of avocado and crumble bacon on top of egg. Arrange tomatoes on top of egg, add chopped onion for color and sprinkle with sesame seeds.
