This week in world domination news, Adam Fleischman is at it again. The man behind the ever-expanding Umami brand (currently on a path of reverse manifest destiny, wooing diners in New York), as well as 800 Degrees, has a new venture in the works. Smoke.oil.salt is set to debut within the next couple of months at 7274 Melrose Ave. in West Hollywood Fairfax district (the space that used to house Evan Kleiman's Angeli Caffe).  

Fleischman has brought on chef Perfecto Rocher to execute the “traditional Spanish” menu. Rocher is best known for his time at Lazy Ox, where his paellas were widely lauded.

Rocher has spent the last year bouncing around. Originally he was going to open a paella restaurant in Santa Monica with Laxy Ox owner Michael Cardenas, but he bowed out of that to pursue something on his own. Then he signed on with Hermosa Restaurant Group, which was a little odd given that their specialty was Japanese and not Spanish, but the rumor was they were also planning to build the chef a Spanish restaurant. Yet Rocher moved along again — and is now the opening chef at Fleischman's newest venture. We can only hope he'll put paella on the menu.

Smoke.oil.salt will have a serious wine focus, with over 500 bottles, as well as sherries, beers, sangrias and ciders.

The restaurant's owners hope for it to be open in late November or early December.
