A new food truck is taking churros to the next level by rolling them in wacky coatings like Fruity Pebbles and Reese's Puffs cereal. 

Oh, and you can get your churros dunked in ice cream if you really feel like going overboard.

Ridges Churro Bar owners (and husband and wife) James and Nancy D. Phan spent the past year slinging their fried pastries from booths at events like the 626 Night Market. But they've recently moved on to running their own food truck, which has been making the rounds throughout Southern California, stopping at places such as Angel City Brewery and along Abbot Kinney in Venice.

The Phans rotate through eight flavors of churros, including Circus Animal cookies, salted caramel and strawberry shortcake. The only permanent churro item is the one rolled in crunchy Fruity Pebbles, which became a staple on the menu due to popular demand.

While you can just order the churros alone, you really ought to consider the churro sundae. The ridged pastries come fresh out of the fryer and get lodged into a scoop of creamy vanilla ice cream like a pair of pointed bunny ears. The pleasing contrast of warm and cold temperatures is not unlike pie à la mode. 

Surprisingly, the Phans had no prior baking experience. Nancy was a fashion designer and James a banker before they went full-time into churros. They first started selling grilled corn at the 626 Night Market, but when that didn't pan out, they decided to move on to something sweeter.

Nancy says that coated churros seemed logical, since “you can put so many toppings on doughnuts.” The couple spent about three months perfecting their recipe and testing different flavors. And since eating a churro with so many toppings can be a little unwieldy at times, they remedied that by “dumping them in ice cream.”

The Phans chose to start off with a food truck so they could take it around to different neighborhoods to gauge popularity and see which location would be best to open a brick-and-mortar, something they plan to do sometime next year.
