He was first introduced to authentic Italian flavors in the heart of his family kitchen, where his nanny Stella would prepare elaborate and delectable family dinners every Sunday. It was her cooking that instilled in him a deep infatuation with time-honored Italian traditions, even if, back then, this connection hadn’t been evident to him.
When Stella passed away, Fondarella rediscovered his love for creating stories on a plate, stepping up to carry on her legacy of taste, tradition, and authenticity. Formal culinary education has never appealed to this aspiring chef, and Fondarella honed his skills and precision through hands-on work at luxurious hotels, humble eateries, local diners, and Michelin-listed establishments. Every experience brought him one step closer to refined skills, but it wasn’t only about that; it was about slowly discovering his signature style.
“Throughout my career, I have spent so much money on cookbooks, I might as well have gone off to culinary school,” he quips. “But it was worth it. It was exactly the firsthand experience I needed, with every recipe and newly discovered method serving as an inspiration for developing my own style.”
With COVID shutting down restaurants and kitchens for months on end, Fondarella understood the important role cooking played in his life.
