Last night, Sandi Romero, 'Mama' of Mama's Hot Tamales Cafe in downtown Los Angeles, wrote a comment on last week's TiGeorges' Chicken Haiti Fundraiser post. In the comment, Mama asked for recipe recommendations for creating a Haitian tamal. All sales, she wrote, would be donated “to help the people of Haiti. Please send any ideas you may have asap.”

As comments often get buried, we emailed Mama for details. Romero says that what she really wants to know is what kind of spices and sauces to use with a fish or chicken recipe and corn masa dough. “Or do you think a rice dough wrapped in a banana leaf might be better? I am open for any and all ideas. Thank you for your help with this fundraising effort. I hope we get some responses – because we will be cooking tomorrow night. I also left a message for my friend George at TiGeorges in Echo Park. Love and Peace, Mama.” That would be tonight. So if anybody has suggestions, you can leave a comment here (we'll pass them along to Romero) or you can call the restaurant.
