If you do not religiously (ha) watch Colbert Nation, you should watch last night's episode, in which Stephen Colbert interviews Nathan Myhrvold. Myhrvold, as you should know with or without the help of Comedy Central, recently published the 6-volume, $625, 40-pound Modernist Cuisine: The Art and Science of Cooking. Sure, Myhrvold has been getting a lot of press, but this is perhaps the only interview which starts off with the inquisitor asking why the former chief technology officer for Microsoft and world BBQ champion bothered, since “God ordained that things should be boiled, baked or fried. Those are the missionary positions of cuisine.”
