When Seed Bistro officially opens on Monday, August 29th, it will boast something few other L.A. restaurants offer: a multi-course fully vegan tasting menu (4 courses/$45; 6 courses/$60). Prepared and served by chef Eric Lechasseur at a small counter near the back of the woody, green-tinged eatery, tastings will be limited to six people per night. With Seed Bistro, Lechasseur aims to turn vegan dining into a gourmet affair.

The restaurant is an expansion of Lechasseur's successful Venice restaurant, Seed Kitchen. For the first month, Seed Bistro will be open only for dinner, but when lunch service begins in early October, look for a handful of Seed Kitchen favorites (like the macrobiotic bowls and some of the half-dozen burger options) to show up on the bistro's lunchtime menu.
As for the regular menu, it is a combo of raw items like a cucumber jicama roll and a raw lasagna alongside small plates of grilled vegetables and entrees like seitan pepper steak, gluten-free penne bolognese and bean cassoulet. Also, look for Lechasseur's award-winning Faux Gras to appear occasionally as a special.
