Whether they were the traditional flapjack varietal or a loose ethno-modernist interpretation, pancakes, both sacred and profane, filled the former St. Vibiana's cathedral on Sunday morning for the first LA Weekly Pancake Breakfast. Curated by our own Jonathan Gold, it was a carbo-loaded, coffee-soaked shindig that featured 20 eateries offering savory and sweet versions of this cross-cultural staple.

Among the classics, BLD with some sort of lemon-ricotta-blueberry pancake may have come the closest to achieving the Platonic ideal of the gourmet pancake, but FIG (with a blueberry compound butter) and Square One (with their amazing bacon-infused caramel sauce), also hit it out of the park. Among the New Modernist flapjacks, the bánh xèo at Xoia was stellar: grilled meat and fresh bean sprouts in a stunning, latticed yellow disc of turmeric and rice flour drizzled with sriracha and wrapped in lettuce. The longest line of all, however, stretched from the LA Mill coffee booth, proving it's a bad idea to separate Angelenos from their rocket fuel.
