Besha RodellRépublique, the much-anticipated restaurant from Walter and Margarita Manzke, will officially open to the public on Monday, Nov. 25. This is after a glitch with Open Table that allowed diners to make reservations beginning Nov. 15. République will be honoring those reservations with a shortened menu for the 10 days leading up to the official opening, but will be serving only 50 diners a night and will not accept walk-ins or further reservations until Nov. 25.
The restaurant, which is in the building Campanile vacated late last year, has been in the works for more than a year. The Manzkes have partnered with restaurateur Bill Chait for the project. They're billing it as an L.A. take on France's bistronomie movement, with a charcuterie counter, raw bar and contemporary French bistro fare. There will eventually be a rear dining area that is more formal, but it won't open until next year. At that time, a tasting-menu option will become available.
République will be open for dinner service from 6-10 p.m. Monday through Wednesday and 6-11 p.m. Thursday through Saturday; closed on Sundays.
