That hot chef-on-chef action people love is back soon. The next 5 x 5 Chefs Collaborative dinner (five LA chefs cook five courses, and invite an out-of-towner to cook a sixth) takes place at Michael Cimarusti's Providence on Tuesday, April 28 and features guest Michelin-two star chef Alessandro Stratta from Alex at the Wynn in Las Vegas. The menu run-down goes like this: David LeFevre's (Water Grill) kampachi sashimi; Josiah Citrin's Santa Barbara abalone and prawn “printanier” (meaning lots of spring vegetables) in a shellfish-lemongrass emulsion; Gino Angelini's orzo timbale wrapped in spinach leaves with peas, artichokes and fegato d'oca (ah, that goose liver); Neal Fraser's (Grace) wild striped bass with white-carrot puree, nettles, fava beans, and fennel pollen; Alessandro Stratta's roasted duck “Apicius,” and from Providence's mad-genius pastry chef, Adrian Vasquez, “A Café in Bordeaux” concoction of canelé ice cream, coffee parfait and hazelnuts. This is a meal that's worth saving up for — it's $150 per person, $215 with wine pairings. The other upcoming 5 x 5 dinners are May 17 at Melisse, June 15 at Grace, August 23 at Water Grill, and September 21 at Angelini Osteria.
