Restaurant customers, watch what you wish for. After “having a lot of talks with regular guests at night” who wanted to see brunch added to Fig at the Fairmont Hotel in Santa Monica, Chef Ray Garcia starts serving the weekend daytime meal this Sunday, June 28. “I was hearing a lot of 'bacon and eggs' and I decided to play with that,” Garcia says.

His menu is full of farmers' market goods, Neuske's pork, and coordinated cocktails. A la carte options are available, or the Kegs and Eggs package ($37) lets diners chose an egg-based dish with all the draft beer you can drink.

Garcia looked at “the way the menu was going, and we came back to beer with the saltiness of the bacon…and [wanted to] incorporate that into the cocktails.” What to drink with the bacon waffle a la mode, or bacon wrapped bacon? So he makes a powdered bacon salt to give “a great smoky scent,” and a strip of bacon garnish for the Bloody Maria, and bacon-infused gin drinks makes the theme startlingly clear.

Intriguing, yes. Also a good way to get to know that combination of afternoon nap + couch better.
