Chef Jason Fullilove joins Abernethy’s as second chef-in-residence starting today  at the Music Center’s one-of-a-kind, full-service  restaurant that  features a new rising chef and menu every three months spotlighting the diverse cuisines representing L.A.   Following inaugural chef Shirley Chung,  Fullilove  will  debut his modern soul food  family style menu.

Known for his globally-inspired soul food and made-from-scratch dishes with natural ingredients,  the current executive chef of the Magic Castle and chef/owner of Barbara Jean L.A. will present a menu that includes shrimp and grits,  crayfish mac and cheese and acorn squash rice porridge.   There’s also BBQ bone-in short ribs with saffron-poached apple, chicken liver butter and a fried chicken sandwich with apple kohlrabi slaw, tamarind BBQ sauce and pickles on a brioche.  For dessert, southern favorites include buttermilk pie with caramel apples and hummingbird cake.

Together with Music Center board member and chair of Abernethy’s culinary advisors Jill Baldauf — a team that included chefs Govind Armstrong, Susan Feniger, Ray Garcia and everyone’s favorite foodie, producer Phil Rosenthal, of Somebody Feed Phil — tasted their away across L.A. to determine the lineup.   Future  emerging talent that will be popping up  includes chefs Pla and Fern Kaewtathip (Noree Thai on Beverly, Luv2eat Thai Bistro), Geter Atienza (Chef de Cuisine, The H. Wood Group and Broken Spanish) and Ryan Costanza (Executive Chef, Freedman’s Restaurant.
