Baja California is very hot right now. Just ask Anthony Bourdain, The New Yorker, or Dwell. Now chef Jonathan Waxman, cookbook author, chef/owner of Barbuto in NYC and culinary consultant for Rosa Mexicano, is debuting his “Foods of Baja” menu at the restaurant's West Hollywood and L.A. Live locations. It offers a “seasonal celebration inspired by the signature flavors of the Baja peninsula.”

The menu includes things like roasted pork shoulder tacos with ginger, lime, chile and cabbage salad; calamari stuffed with chorizo in cazuela; fideo with rabbit, arbol chili-roasted tomato salsa, portabello mushroom, chicken thighs and scallions; and a plum and blackberry compote with crema Catalana for dessert. You also can try a minimalist Miel de Toronja cocktail made with tequila, mezcal, honey, fresh grapefruit and lime.

The menu runs from June 6 to July 1, and is part of the Flavors of Mexico cooking series that Waxman has been designing over the past few months. Sure, the actual drive to Baja takes only a few hours, but the crowds at Rosa Mexicano won't ever compare with the throngs of people waiting to cross the border.
