Let’s spice things up for dinner tonight! Who doesn’t enjoy a nice healthy fajita? Read on for a simple yet satisfying recipe for “Hemped” Vegan Mushroom Fajitas!

This take on fajitas lacks nothing in flavor, but caps the calories just right. Made with fresh portobellos, onions, bell peppers, garlic and beautiful hemp seeds. Hemp seeds are a great addition to many recipes, adding a boost of flavor, nutrition and texture.

A few spoonful’s of hemp seeds can pack a serious dose of essential nutrition. They are easy to cook with, boosting a nutty taste, and will not get you any kind of “high.” Hemp seeds, also known as hemp hearts, are the seeds of hemp and sativa cannabis plants. They are used frequently to simple sprinkle on food, pressed for oil, ground into a  protein powder or made into “milk.” These different forms make hemp seeds a great ingredient for a variety of recipes.

Hemp seeds are great for people who suffer gluten allergies, working as a substitution for breading. They are an excellent source of protein and amino acids. Hemp seeds are also packed with essential omega fatty acids, and should be used to finish off a recipe as they can break down during the cooking process.

In this recipe, you can add just hemp seeds or add in a little extra umph with CBD oil and the seeds. Be sure to follow the cooking instructions and add your ingredients accordingly to the steps for best results. If you aren’t sticking to the vegan diet, sprinkle some queso fresco for a finishing touch with your hemp seeds! Enjoy with chips and guac or salsa for a fully rounded out meal.

Hemped Up (Vegan)  Mushroom Fajitas

2 or 3 Portobello Mushrooms (Or Couple Handfuls of favorite Mushroom)
1/2 Red Onion
1 small hot pepper or .5 Bell Pepper
2 Garlic Cloves
2 Heaping Tbls Organic Hemp Seeds
1 Tbls Olive Oil
1 Tbls Organic Hemp Oil
.5tsp Paprika
.5tsp Onion powder
.5tsp Garlic powder
.25tsp Cayenne or Chipotle powder
1tsp Dried Oregano
1.5 tsp Kosher salt

1. Slice veggies to any consistent size you prefer and thinly slice garlic cloves.

2. Add olive oil and veg to hot sauté pan, starting with shrooms ending with garlic.

3. Season with salt and spices.

4. Sauté for about 6 minutes until desired texture is achieved.

5. Finish with Hemp Seeds and Oil and Cook until seeds are nicely toasted!
