It's been almost six months since the Flying Pig Truck first rolled onto the streets of LA. Now Flying Pig's co-owner and Le Cordon Bleu-trained chef, Joe Kim, tells us he has big plans to open not one, not two, but three new restaurants around town.

Butalani, Kim's first brick-and-mortar located on WeHo's Beverly Boulevard, is awaiting parking approval from the city. Given LA's permit system, that should be quick and painless (or not). Kim tells us his second and third restaurants, both named Flying Pig Cafe, are “in downtown between 5th and Main and on Sunset Boulevard near the CNN building,” respectively. Kim hopes to sign the lease on the downtown location within two weeks but as far as an official opening date, it's a race to the finish between the three restaurants. Kim says “we are planning to open the first one – whichever comes first – before the Fourth of July.”

Kim also adds that “…each location will serve different kinds of food but will follow Flying Pig Truck's concept: Asian Fusion combined with French technique.” Signature dishes will include braised pork belly and duck confit.
