Coachella: Ray Garcia and Adam Sobel Serve Up the Perfect Porchetta


Outstanding in the Field, the granddaddy of all pop-ups, celebrates its 20th anniversary this year and for the sixth year brought an all-star lineup to the Coachella Valley Music and Arts Festival that included Susan Feniger and Mary Sue Milliken, Elisabeth Prueitt, Katie Hagan-Whelchel, Leah Chin-Katz from Tartine and a porchetta feast courtesy of Ray Garcia from Broken Spanish and Adam Sobel of Cal Mare.

The team of Garcia and Sobel rocked the Empire Polo Field Rose Garden with a Beeler's Farm porchetta stuffed with Sage Mountain Farms green garlic and JF Organic Farms beet conserva and baby fennel with DOP mozzarella, toasted hazelnuts and aged balsamic. They closed out the show with two desserts, one of which was a tres leches cake with vanilla chiffon, mandarins, toasted meringue and candied almonds.
