Hot off their pickling pop-up and appearance at Artisanal LA, Chicks with Knives are moving on to the world of big-time butchery. This time, the Chicks — aka Rachael Narins and Suzanne Griswold — are pairing with LA's favorite sustainable butchers “Lindy and Grundy” — aka Amelia Posada and Erika Nakamura — to host Butchery 101, a butchery class and demonstration on Sunday, November 14 from 11:30 a.m. – 2 p.m. at Surfas in Culver City.

Lindy and Grundy will get the morning started by demonstrating how to break down a whole lamb. We're hoping guests have strong stomachs because they'll be offered light appetizers and drinks while they watch the girls' work. Once the lamb has been sufficiently broken down (physically, not emotionally), the Chicks will lead a hands-on class discussing proper knife sharpening techniques, maintenance and care. In addition to the lamb demonstration, everyone in the class will also learn how to butcher a whole fish and chicken and will also get to take home a (different) fish, an organic chicken and a piece of the aforementioned lamb.
