These days, “white pizza” is no more than a pie sans red sauce — neither inventive nor worthy of consuming unless you have a tomato allergy. If you want white done right, dive into the decadently creamy-delicious Alfredo Pizza at Paoli's Pizzeria & Piano Bar. This all began 28 years ago when owner Chairon Miller went a little crazy in her home kitchen and — what the hell? — decided to combine two of her favorite foods: Alfredo sauce and pizza. She went all out, throwing in rich white cheeses, high-quality cream, real butter and lots of olive oil and garlic, then baking it all atop buttery-biscuit-soft, homemade dough. The result: an intoxicatingly aromatic deep-dish pie with a perfectly browned white-cheese encasement bubbling away on the outside and a dense, garlicky white-cheese sauce bursting forth from the inside. Advice: First-timers should order Alfredo plain for the full-on white experience, then progress to the Alfredo Climax, a pesto-sausage spin that's even more decadent than the original. 21020 Ventura Blvd., Woodland Hills.
