We're sure you've seen those colorful macarons popping up all over town. You can learn to make your own — from an authentic French chef, no less — at Santa Monica's Gourmandise School of Sweets and Savories. Co-owned by teachers Clemence Gossett and Hadley Hughes, this hands-on school offers all levels of instruction, with a focus on classic techniques and using seasonal, locally sourced ingredients. In addition to various baked goods (pies or tarts made with fruit from the farmers market, rustic French desserts, Southern cakes), classes include tapas, ravioli, tamales, Mediterranean cooking, canning and preserving, even cheese making. Both vegan and gluten-free baking are on the menu here, as well as raw meals. Most classes last three to four hours, although there is a six-hour croissant class and a three-day intensive “Pro Pastry” series. Every student gets to work on his or her own dish(es), and everyone gets to taste, too. We're waiting for them to repeat “Baking With Bacon”!
