Leading up to this year's Best of L.A. issue (due out Oct. 4), we'll be counting down, in no particular order, 100 of our favorite dishes.

60: Huckleberry's Green Eggs & Ham.

This breakfast dish, named for the Dr. Seuss book, has been on Huckleberry's menu since 2009, when Zoe Nathan and Josh Loeb opened their Santa Monica bakery, conveniently located down the street from what I suppose can now be called their flagship restaurant, Rustic Canyon. (You get a flagship when you have three other restaurants, right?)

The eggs are sunny-side up, the pesto is of the delicate rather than the rustic variety, the prosciuitto — from the Iowa prosciuttificio La Quercia — is supple and subtly gamey, the arugula is flavorful rather than the bitter stuff (too old) that you find on many menus, and the muffins are made in-house. Of course they are: Nathan is one of the best bakers not just in this town but in the country.

No, the eggs aren't dyed — this isn't a St. Patrick's Day gimmick — but the pesto does stain most of their surface area a bright Kelly green, and there is enough arugula to make that color the overriding message. With or without a kid as your breakfast companion, this is one of the best morning dishes in town.
