Leading up to this year's Best of L.A. issue (due out Oct. 4), we'll be counting down, in no particular order, 100 of our favorite dishes.

59: Pickled Watermelon Salad at L&E Oyster Bar

On days like these, when the temperature is pushing 100, we just want a cooling salad. A salad with bursts of cool refreshing flavors. A salad that could almost double as air conditioning. We want something cold, dammit.

L&E Oyster Bar has just such a salad. The pickled watermelon salad is made up of 1/2-inch slabs of juicy watermelon (the name says pickled but I'm pretty sure the watermelon itself isn't pickled — if it is, it's an incredibly light pickle), thinner slices of crunchy jicama, and the bracing flavor of opal basil. This is then sprinkled with creamy French feta and topped with cumin-roasted pumpkin seeds, which provide the exact right amount of salt and texture to the dish. A touch of vinegar, some Austrian pumpkin seed oil, and you've got the most refreshing, juicy, cooling salad ever.

Served up with a dozen of L&E's ice-cold oysters, and you've got a summer meal worth sweating over.
