Leading up to this year's Best of L.A. issue (due out Oct. 4), we'll be counting down, in no particular order, 100 of our favorite dishes.
51: Almond croissant at Proof Bakery.
It's hard not to drool all over the glass of the bakery case at Proof Bakery in Atwater Village, such is the bounty that resides within. Cakes, tarts, pastries, and quiches all sing their siren song from behind that glass. But the item that wins out in our hearts and demands to be eaten most often is the almond croissant, sitting primly at the end of the counter.
Compact and golden brown, this small beauty avoids all the pitfalls that plague many other croissants of the almond-variety. Almond croissants can be too sweet, too floppy, their interiors besmirched by sugary goo. But not at Proof.
The croissant manages to have that glorious stretch to the dough at the same time as being shattery and crisp on the outside. Covered in a generous layer of toasted almonds and holding exactly the right amount of almond paste (not to dry, not too sticky, not too sweet) within the folds of its pastry, this croissant gives us sweet-breakfast lovers the exact right kick of luxury along with a cup of Proof's excellent coffee.
