30: Crispy Pork at Crispy Pork Gang & Grill

You don't mess with the Crispy Pork Gang (& Grill). This restaurant, located in the heart of East Hollywood's Thai Town, might not count Pony Boy, Sodapop, or Two-Bit as members — but it certainly does one thing very well: crunchy bits of fried pork belly.

The dish known generally as moo tod is a staple at many late-night Thai diners in Hollywood, including a few located in the same strip mall as this one. But the cubes of unctuous pork belly, crunchy as croutons, are the tops here. You can have them served in a myriad of ways — tossed in fried rice or crispy rice salad, in soup or mixed with funky cured duck eggs. But the most popular way to order the famous pork might be wok-seared with a sauce redolent of red chile and garlic, along with some long slippery strands of sauteed morning glory. The lightness of the morning glory cuts the heaviness of the pork beautifully, making for balanced dish that's among our favorites in Thai Town.
