Chef Timothy Hollingsworth and canine companion - COURTESY TIMOTHY HOLLINGSWORTH

The Broad Museum isn't set to open until 2015, but they already have chef Timothy Hollingsworth onboard to run the museum restaurant. Hollingsworth is a big deal: He worked for years as chef de cuisine at The French Laundry. He stepped down from that position in 2013, and moved to L.A., where he hoped to open a taqueria. But when restaurateur extraordinaire Bill Chait approached him about running the kitchen at the Broad, he couldn't turn down the opportunity.

But what's a chef to do while waiting on his restaurant to open? Part of what Hollingsworth will be doing is a pop-up at Short Order, another Chait operation. The pop-up will be barbecue-themed, and not have anything at all to do with the food Hollingsworth will be cooking at the Broad.

If you're a sports fan, this is a glorious time of year. The Stanley Cup finals begin tonight (Go Kings!), the NBA finals begin tomorrow (Your Clippers comment here: ____ ) and the Dodgers are finally trying to play some decent baseball.

If you don't live in a frat house, you may be looking for a good place to watch a game, eat some excellent food and drink yourself silly. As we've noted before in these pages, Bludso's Bar-&-Cue on La Brea is a pretty fine place to do this.

Well, it's now an even better place for sports-watching, since as of this afternoon, Bludso's will be serving happy hour. From 5-7 p.m., Monday through Friday, you can get $3 PBR and Shiner bock, and $2 off all cocktails. And if you're the designated driver (cheers), order yourself some soda water and not a few $3 brisket or pulled pork sliders.

Memorial Day - a holiday with a somber meaning that we have turned into something joyous. The beginning of summer. The beginning of barbecue season. The beginning of white shoes.

While we hope that you do pause on Monday to reflect on those we've lost, we also hope you have a fabulous day celebrating the more lighthearted aspects of a late spring day off. With that in mind, we've gathered some of our best grilling, drinking and barbecue-eating advice, in the hopes you'll find some joy in the first of the great summer holiday weekends. Enjoy.

Adam Fleischman has a knack for gimmicks. The guy who launched the Umami Burger empire and recently announced that he'll be opening a chocolate-flavored fried chicken joint is no stranger to super concept-y concepts. And so, when he announced that Roadhouse LA, his new venture at The Improv, would be "international BBQ" it was easy to assume that there'd be more concept than substance here.

But if anyone's going to teach us that it's quite possible to have both gimmick and substance, it'll be Fleischman. The first good sign was bringing on chef Robbie Richter, who was the original pitmaster at New York's Fatty Cue. The second good sign is that on first look, the food is pretty damn tasty.

Maybe the folks at Bludso's Bar-&-Cue in Hollywood secretly just want to be party planners.  Because in addition to being formidable pit masters, beer geeks and cocktailians, they seem to be spending a lot of time throwing sudden parties - pop-up breakfast tacos, or whole pig roasts for football games, like tailgating events with swank bar seating instead of actual pick-up trucks.

So it should hardly surprise you to learn that Bludso's is throwing another party, this time on the occasion of one of the sillier holidays we've managed to invent: Valentine's Day. "Most people don't tend to think of barbecue as a romantic meal," Noah Galuten said in an email. "We over at Bludso's decided to use it as an excuse to encourage friends and single people to come over, drink beer, and eat some smoked animal parts." Sounds like a lot more fun than watching people get engaged at Yamashiro.

Roadhouse: It's no longer just 1989's best movie. It's also now a barbecue restaurant at the Hollywood Improv

As announced back in April of last year, Roadhouse LA is a collaboration between Umami Burger's Adam Fleischman and chef Robbie Richter, who was the original pitmaster at Brooklyn's lauded Fatty Cue. The restaurant had its soft opening this past Monday, and opens to the public tonight, Thurs. Feb. 6.

taps at Bludso's - A. SCATTERGOOD

As we've reported on more than one occasion, Bludso's Bar-&-Cue in Hollywood is an excellent place to watch the game. Any game, really. Great barbecue, lots of flat-screen televisions on the wall. This will be particularly true for the upcoming Super Bowl, not only because it's going to be a pretty terrific football game (Seattle versus Denver in East Rutherford, N.J.), but because the folks at Bludso's have decided to get you properly drunk for the occasion.

The Super Bowl is also a nostalgic event, as it marked Bludso's soft open a year ago. To mark the anniversary, and also because many people there are rabid football fans, on Super Bowl Sunday, which is Feb. 2, there will be an all-you-can-drink beer party.

If you're a fan of both excellent barbecue and football, you'll probably already be thinking about watching this Monday's BCS title game at Bludso's Bar-&-Cue on La Brea Blvd., since the place has established itself as a very good place to eat ribs while you watch sports. Well, unless you're planning to watch the game between Florida State and Auburn live, since it's being played at the Rose Bowl in Pasadena. If so, good luck. Have fun. Eat well.

If you don't have tickets either, here's another reason to head to Hollywood: Bludso's will again be having a free pig dinner to celebrate that other exercise in excellent pigskin. If you'll recall, back in December Kevin Bludso decided to roast a whole hog and serve up the results -- for free -- in honor of his beloved Cowboys being on Monday Night Football. Apparently a good time was had by all (even though, sadly for Kevin, the Cowboys didn't win that game), so the folks at Bludso's are going to do it again.

If you're a fan of barbecue in this town, you're probably quite familiar with the seats at Bludso's Bar-&-Cue on La Brea Blvd. You're probably also very familiar with the screens above those seats, as Bludso's is an excellent place to catch a game. Kevin Bludso, the man behind both the barbecue here and at his original joint in Compton, made sure of that, as he's a pretty big football fan himself. A Cowboys fan, to be specific.

In honor of tonight's game, in which the Cowboys take on the Chicago Bears on Monday Night Football, Bludso himself will be in Hollywood smoking a whole 50-pound hog. The results of this beautiful experiment will be served tonight for free, on a first-come, first-served basis. No word on whether you need to be a Cowboys fan to come to the party, but I imagine it would only be polite to pretend to be to the man who's giving you a free barbecue dinner in his own house.

"Barbecue has always been here," says Neil Strawder, who owns both the smokers and the nickname behind Bigmista's Barbecue, one of Los Angeles' best-known purveyors of low-and-slow-cooked 'cue. "But a lot of people haven't been willing to go to where the barbecue was."

Strawder is standing inside Bigmista's pop-up tent at a weekly downtown farmers market, trimming a freshly smoked hunk of brisket. As if to prove his point, a white-collar banker type peeks in through the order window, eyeing the scene. "It's becoming more accessible," Strawder says. "Not everyone was willing to go to the 'joint.' "

Truth be told, Strawder himself didn't start at the joint. The self-taught home barbecuer began his obsession in online forums, picking up tips and tools from respected pitmasters in meaty towns like Memphis, Kansas City and Austin, Texas.

That fusion of intelligence, tradition and technique across several regionally specific disciplines has given Bigmista's menu a boundless quality. On any given day, you might find dry-rubbed beef sharing plates with brined and smoked turkey breast, slices of peppery pastrami and sauce-covered rib tips, plus pineapple coleslaw on the side. This is the future of barbecue in L.A.
