What's the Consorzio del Prosciutto di Parma? It's an organization formed in 1963 to establish a set of guidelines that would protect the ham that had been produced in the area surrounding Parma for hundreds of years. In 1996, the Consorzio's efforts lead to the recognition of Prosciutto di Parma as a PDO (Protected Designation of Origin).Ludo Lefebvre and his Trois Mec business partners, Vinny Dotolo and Jon Shook, will celebrate the 50th anniversary using the Ludo Truck. Next Friday, the truck will be giving out free slices of Prosciutto di Parma, as well as serving $5 dishes featuring the birthday ingredient: a Prosciutto di Parma Parisian sandwich from Lefebvre, crispy Prosciutto di Parma with mozzarella from Dotolo, and a Prosciutto di Parma chopped salad from Shook.
The truck will be at Pershing Square from 12:30-2 p.m., and then outside Bar Covell from 7-8:30 p.m. Bar Covell will serve $10 glasses of wine to pair with each dish.
