Schat's Bakery: From Mammoth to El Segundo

Generations of skiers and mountaineers have stopped at Erick Schat's Bakkery in Bishop, perhaps for a loaf of their famous shephearder's bread, perhaps for a few of the deep-fried doughnuts known as olliebollen. Now, the Dutch bakery chain is coming to Southern California with David Schat's Bakery Cafe set to open soon in El Segundo.

The Schat family baking tradition goes back to Holland in the late 1800s, according to NBC LA. David learned the trade in Bishop from his grandfather, bakery scion Jack Schat, and started coming to El Segundo when he was in high school.

Though they're most famous for their sheephearder's bread, a recipe that supposedly dates back to the turn of the last century, we're in love with their pecan pullaway bread. Known in some quarters as monkey bread, this brawny, nutty version of the traditional pecan roll is a sticky, gooey, chewy wonder.

Civic leaders hope the bakery will be a destination business for downtown El Segundo.
