If you're often fighting your way to the front of the line at food truck festivals, cupcake challenges, (and the Gold Standard food event on Sunday), you should probably try to squeeze in a salad. As far as we know, there are no salad trucks just yet. But there is Mixt Greens, an organic, sustainable restaurant with a massive salad bar, opening on Miracle Mile today, replacing Organic To Go. The family-owned chain, originating in San Francisco in 2006, is spreading the word on healthful eating, and will continue to expand throughout Los Angeles. Compared to its smaller downtown location, the new space is double in size, with more indoor and outdoor seating. At yesterday's soft opening, a line extended down the block, while locals rushed in during lunch hour to choose from over 30 locally sourced ingredients at the salad bar. And with Gov. Schwarzenegger's recent obesity summit, a salad seems somehow appropriate.
