Who needs leavening?
Passover begins this Wednesday at sundown, which means that cooks all over Los Angeles will be scrambling to come up with appropriate seder menus. Dessert is always the most difficult course -- flour and leavening agents aren't allowed during the seven-day holiday commemorating the Israelites' exodus from Egypt. So let us now celebrate the Feast of Unleavened Bread, not with the usual macaroons or honeycake, but with a Passover sweet from Cake Monkey's Elizabeth Belkind: Behold a chocolate-hazelnut tart made with flourless chocolate cake and chocolate ganache in a hazelnut-maztoh-meal crust topped with curls of coffee-hazelnut Florentine cookies.
