With its exuberant waitresses, opulent people-watching and utter insanity of the decor, Mari Vanna in West Hollywood is well worth a visit, whether or not you have any interest in Russian cuisine. There are no culinary tricks, no attempts to Americanize or modernize this food. Served on mismatched flowery plates, Mari Vanna's edible offerings come mostly in shades of white and brown, and are cooked with a loving reverence for tradition. There is palmeni and vareniki, dumplings of veal and potato, and dishes like satsivi and shuba, which are rarely available in America. If you're doing it right, your meal at Mari Vanna will be lubricated with vodka. -- Besha Rodell
