At this Japanese restaurant in Redondo Beach that specializes in small plates, one of the standout dishes is the agedashi tofu by chef Tomo Ueno. A delicate treat often overlooked at Japanese izakayas, every batch is made to order: A few pale cubes of silken tofu are lightly dusted with batter and fried until they're surrounded by crisp golden shells. A ladle of slightly-sweet dashi broth and a handful of snowy shaved mountain yam, dried seaweed and diced green onion grace the top.
