When the Churro Borough opened five months ago, its signature offering, the churro ice cream sandwich, was crowned, by some, as the dessert trend de jour. But 33-year-old, Santa Monica–born Sylvia Yoo, an interior designer who got laid off in the great recession and studied under a French pastry chef, insists that her confections are here to stay. And why not? Yoo's sandwich feels like a staple, like something we were missing without even knowing it. Made with two small discs of flakey, light, freshly fried churros that taste almost like croissants (Yoo describes them as Spanish-style churros with a French influence) and homemade ice cream, it's no wonder lines are still snaking around the block for this thing.
