Chef/owner Hiroji Obayashi opened Hirozen in 1989, and just as fashion has changed so has sushi. Many Japanese restaurants have added trendy menu fixtures such as spicy tuna on crispy rice, baked crab rolls and albacore with crispy onions. But Hirozen stays true to tradition with simple sashimi dishes, Japanese noodles, tuna carpaccio and omakase menus.
