A few of the Goldilocks Bakeshop locations across the Southland come with attached restaurants, but the fast food they serve approximates traditional Filipino cuisine about as well as McDonald's burgers approximate ones straight off the grill. No, the main attraction here, as the name indicates, are the bakery items: the polvoron milk-powder treats, the tiny purple ube puto cakes, the pan de sal, or “salted bread” rolls, the butter-intensive ensaymada brioche pastries sprinkled with grated cheese and sugar, the pastillas de leche milk candies and the tropical fruit-filled boat tarts. The Philippine palate is sweet and salty and a little bit sour, and Goldilocks caters to this holy trinity. To cut the sugar, there are pork buns and siopao (Chinese for “hot bun”) and bags of savory native snacks like chicharon, or fried pork skin seasoned with salt and vinegar, and garlic peanuts.
