Travel back in time to the elegance of French colonial Vietnam at Crustacean, where executive chef Helene An guards her secret recipes so zealously six "sacred" dishes are prepared in a private, steel-encased kitchen. Highly recommended are two versions of Dungeness crab: an entire crab simmered in sake, chardonnay and cognac or in garlic sauce and secret spices. Also unforgettable are the colossal royal tiger prawns, charbroiled and served over garlic noodles. And to complement the meal, there is live music nightly.
